Basil Spaghetti with Cheesy Steamed Tomatoes

Cheese you say??  Oh you've got me hooked.  

There's pasta too??  Oh yeah. 

Fresh garden grown tomatoes??

Basil AND garlic too?

Too good to be true!

This was dinner tonight, paired with a spinach and kiwi salad and it was a meal.  Woot woot! 
Bonus: Husband approved :)

Here's the recipe so you can try it at home...

Basil Spaghetti with Cheesy Steamed Tomatoes
Serves 6-7 Approx. 250 cals/serving

1 box (13.75 oz.) spaghetti noodles
3 large tomatoes (cut into thick slices)
1/4 c. parmesan
1/2 c. mozzarella cheese
2 garlic cloves (minced)
1/4 tsp. red pepper flakes
3 tbsp olive oil
1 tbsp basil
salt and pepper to taste

Boil spaghetti according to box directions.  As spaghetti is boiling, coat a large skillet with 1 tbsp olive oil.  Lay tomato slices in skillet, sprinkle salt and pepper, parmesan cheese and mozzarella over tomato slices.  Cover and simmer on medium/low heat.  Once spaghetti is cooked, drain and toss noodles with remainder of olive oil, red pepper flakes, minced garlic cloves, and basil.  Serve cheesy tomatoes on top of seasoned spaghetti.

I hate to speak too soon, but I just had to share my migraine count for the month of July to date:

 3!!!! 

Praise God! 
I know the month isn't over, but thus far, it's so much better than the last two months!

Looks like the hormone therapy is working!!!  YES!!!!!!!
