Yesterday's post was lacking a picture of these little morsels of goodness!
I made them this afternoon and they were super easy and delicious.
Oh and I figured up the calorie count.
They are 110 calories each.
Healthy Energy Bites:
1 cup oatmeal (quick oats)
1/2 cup natural peanut butter (or other nut butter)
1/3 cup honey
1 cup unsweetened coconut flakes
1/2 cup ground flax-seed
1 tsp vanilla extract
Mix everything together in a medium bowl until thoroughly incorporated. I had to use a little extra honey to make it stick together. Let chill in the refrigerator for a half hour. Once chilled, roll into balls and enjoy! Store in an airtight container and keep refrigerated for up to 1 week.
